This mixture called Tempurako, is based on wheat flour and potato starch, giving a crispy, very light texture to fried foods.

Tempura is originally a Portuguese dish, introduced in Japan. These donuts dipped in a soy and dashi sauce, are now a classic of Japanese cuisine. The ingredients most often used are the shrimps, fish, shiitake mushroom, sweet potato, pumpkin or even pepper.

Preparation tips :

It is advisable to use ice water to make the dough. Once made, use it immediately to create a thermal shock with the hot oil.

Do not mix the dough too long to prevent the gluten from developing and thus making the frying too elastic.

Mix with chopsticks rather than with a whisk to prevent the preparation from foaming. The lumps are not annoying.
