Soy sauce, called "Shôyu" in Japan, is a seasoning made from soy, wheat, salt and water. It is a staple of Japanese cuisine, especially used to salt, spice up, most dishes such as vegetables, meats and fish as well as for barbecuing and seasoning salads.

Good to know :

Traditionally, soy sauce production begins in the fall, after the wheat and soybeans are harvested.

Soy beans are steamed and the wheat is roasted in a wood-fired oven. The flavor of the soy sauce will depend on the quality and control of this roasting.
